In a remote island destination where supply chains can be unpredictable, we chose to do things the hard way — the right way. Every dish at FATCAT is made from scratch in our kitchen. Our sourdough undergoes a 48-hour fermentation process that gives it a distinctive tangy flavor and airy, chewy texture that pizza purists love. Our hollandaise is prepared fresh every morning. Our pasta is rolled and cut by hand.
We partner directly with San Vicente farmers and local Palawan suppliers to source the freshest seasonal produce. This farm-to-table approach isn't just about quality — it's about supporting the community that welcomed us and ensuring that every peso spent at FATCAT contributes to the local economy of Port Barton and the broader San Vicente municipality.
